These nut balls make great healthy snacks. Remember to use non-GMO and organic where possible.

1/3 cup desiccated coconut

1/2 cup ground almonds

2 tblsp. cashew nut (or other nut/seed) butter

3 tsps. coconut oil (raw, virgin, cold-pressed)

1-3 tsps. Honey or maple syrup (to taste)


Mix all ingredients together in a bowl and roll into individual balls (if you use your hands (much more fun!) the coconut oil will melt and help in shaping the balls); keep in freezer in a container or freezer bags, separating balls out – they can be eaten frozen or taken with you to work/play so they will thaw out slowly during day. If weather is cool or they are kept in the refrigerator they will hold shape. Experiment with using different nut or seed butters.
